Recipe: Garden Tzatziki

It's important to us to give visitors of the Bird Valley Organics farm a taste of hügelkultur - literally. Sometimes that means we pull together a feast from the garden for guests to enjoy after walking the hügel field. Well, last season we grew cucumbers. So. Many. Cucumbers.


Naturally, we made tzatziki for our farm tour visitors. We kept making it all season & now year long because this recipe is addicting. And we're always finding new meals to pair well with our tzatziki obsession.


First, the top three reasons we love cucumbers:

  1. Healthy: Cucumbers are 96% water making them delicious to eat & incredibly hydrating for your body

  2. Regenerative: Cucumbers are a great companion plant for other crops we grow like kohlrabi, sunflowers, beans, corn, celery, and tomatoes. Cucumbers will use the sunflower & bean stalks as a trellis to get better access to sunlight.

  3. Delicious: Cucumbers are a key ingredient in one of our favorite dishes: tzatziki.



What is tzatziki?


Made from various combinations yogurt, dill, olive oil, and cucumbers, tzatziki is a dipping sauce common throughout the Mediterranean and Arab World. While it's a refreshing addition to a summer meal, we love to enjoy tzatziki all year long when we're craving that easy breezy feeling of vacation.


The best part of tzatziki is that it's delicious and super easy to make.


Ingredients:

  • ½ cup finely grated cucumber (or chopped works too!)

  • 1 cup thick whole milk Greek yogurt

  • 1 tablespoon lemon juice

  • ½ tablespoon extra-virgin olive oil

  • 1 garlic clove, grated

  • ¼ teaspoon sea salt

  • 1 tablespoon chopped dill

  • 1 tablespoon chopped mint, optional

Directions

  1. In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use

Seriously. That's all it takes to make this delicious dipping sauce.


To Infuse: add your Full Spectrum Oil dose to the olive oil before mixing with the other ingredients. Follow the dosing instructions on your package.

Bonus: Dishes to pair with your tzatziki:

  1. Crudité: dip your favorite veggies in it for a yummy snack

  2. Sandwiches: tzatziki goes great with shwarma, gyro, chicken, and lamb!
